Expert Tips for Best Results!

  • Use Room Temperature Ingredients – Room temperature eggs and buttermilk blend more smoothly into the batter, creating a uniform texture and preventing overmixing.
  • Do Not Overmix the Batter – Mix just until combined after adding the dry ingredients. Overmixing can develop excess gluten, resulting in a dense loaf instead of a soft and tender crumb.
  • Check for Doneness Properly – Insert a toothpick into the center of the loaf. If it comes out clean or with a few moist crumbs, the cake is ready. Avoid overbaking to maintain moisture.
  • Cool Before Glazing – Always allow the loaf cake to cool completely before adding the sugar glaze to prevent it from melting and becoming too thin.
  • Measure Flour Correctly – For the most accurate results, use a kitchen scale. Too much flour can make the loaf dry rather than moist and fluffy.

How to make Brown Sugar Loaf Cake?

Step 1: Prepare the Pan and Oven

First, preheat the oven to 175°C and grease or line your loaf pan. Preparing the pan properly ensures the loaf cake releases easily after baking and keeps its beautiful shape.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. This step distributes the leavening evenly, helping the loaf cake rise evenly with a soft, tender crumb.

Step 3: Whisk Eggs and Sugars

In a large bowl, whisk the eggs with the light brown sugar and white sugar until the mixture becomes slightly pale and fluffy. This creates structure and gives the cake its moist, rich texture.

Step 4: Add Butter and Oil

Next, mix in the vanilla extract, melted butter, and oil. The combination of butter for flavour and oil for moisture is what makes this loaf cake exceptionally soft and bakery style.

Step 5: Alternate Dry Ingredients and Buttermilk

Add half of the dry mixture and gently fold it in. Then add half of the buttermilk and mix lightly. Repeat with the remaining dry ingredients and buttermilk, mixing just until combined. Avoid overmixing to maintain a tender crumb.

Step 6: Bake the Loaf Cake

Pour the batter into the prepared loaf pan and smooth the top. Bake until golden and a toothpick inserted into the center comes out clean or with a few moist crumbs. This ensures the cake stays soft without becoming dry.

Step 7: Cool Completely

Let the cake cool in the pan briefly, then transfer it to a wire rack to cool completely. Cooling fully is important before adding the glaze so it sets beautifully on top.

Step 8: Prepare and Add the Sugar Glaze

In a small bowl, whisk together the cream, cream cheese, and powdered sugar until smooth and thick. Adjust the powdered sugar for your desired consistency. Once the loaf cake is completely cool, spread the glaze evenly over the top for a glossy, sweet finish.

Frequently Asked Questions

What makes this loaf cake so moist?
The combination of butter and oil ensures richness while keeping the crumb soft. Additionally, light brown sugar adds moisture and depth of flavour.

Can I use only white sugar?
Yes, but the light brown sugar gives this tea cake a deeper caramel-like flavour and softer texture. Substituting entirely with white sugar may slightly change the taste and moisture level.

Why did my loaf sink in the middle?
This can happen if the oven door is opened too early, the cake is underbaked, or the batter was overmixed. Make sure to bake fully and avoid disturbing it during baking.

How should I store this loaf cake?
Store in an airtight container at room temperature for up to 3 days. You can also refrigerate it and bring to room temperature before serving for best texture.
