In a bowl, mix the chicken cubes with salt, paprika, black pepper, MSG, and chopped ginger. Let it marinate for at least 20–30 minutes. This step ensures the chicken absorbs all the flavour and stays juicy when cooked.
Step 3: Cook the Chicken
Heat 2 tablespoons of oil in a pan over medium heat. Add the marinated chicken and cook, stirring occasionally, until fully cooked and slightly golden on the edges.
Step 4: Add the Teriyaki Sauce
Once the chicken is cooked through, add 3–4 tablespoons of teriyaki sauce. Stir well and let it simmer for a few minutes until the sauce becomes glossy and slightly sticky. Sprinkle sesame seeds on top and turn off the heat. The result should be tender, saucy, and packed with that perfect sweet-savoury umami flavour.

These Chicken Teriyaki Subway Sandwiches are a delicious homemade take on the classic sub, made with soft freshly baked sandwich rolls and juicy teriyaki chicken. The flavourful chicken, fresh veggies, creamy mayo, and melty cheese come together to create the perfect sandwich with sweet, savoury, and umami flavours. Ingredients
For Subway Style Sandwich Bread:
- 4 1/2 cups flour (560g)
- 1 tbsp instant yeast
- 1 1/2 tsp salt
- 3 tbsp oil
- 2 tbsp melted butter
- 1 1/2 cups lukewarm milk (350ml)
- 1 tbsp honey (15g)
For Chicken Stuffing:
- 500g boneless chicken cubes
- Salt
- 1 1/2 tsp paprika
- 1 1/2 tsp black pepper
- 1/2 tsp chicken powder or MSG
- 1 tbsp chopped fresh ginger
- 2 tbsp oil
- 3–4 tbsp teriyaki sauce (adjust to taste)
- Sesame seeds (for garnish)
Instructions
- In a large bowl whisk together the flour, instant yeast, and salt. In another bowl mix the oil, melted butter, lukewarm milk, and honey.
- Add the wet mixture to the dry ingredients and mix until a soft dough forms.
- Knead by hand for about 10 minutes, or use a stand mixer, until the dough becomes smooth, elastic, and no longer sticks to the bowl.
- Cover the dough with a damp towel and let it rise for about 1–1 1/2 hours, or until doubled in size.
- Punch down the dough and transfer it to a floured surface. Divide into equal portions, flatten each piece into a circle, roll into a log, and seal the edges. Roll the logs to about 8 inches and place seam-side down on a lined baking tray.
- Brush the tops with milk, sprinkle with parmesan, herbs, or seeds if desired, score lightly with a sharp knife, then cover and let proof again for about 30 minutes until puffy.
- Bake in a preheated oven until golden brown. Let the bread cool slightly before assembling the sandwiches.
- In a bowl mix the chicken with salt, paprika, black pepper, and chicken powder or MSG. Let it marinate for about 15–30 minutes.
- Heat oil in a pan over medium heat, add the chopped ginger, and sauté briefly until fragrant. Add the marinated chicken and cook until fully cooked and lightly golden.
- Stir in the teriyaki sauce and cook for another minute until the chicken is well coated. Sprinkle sesame seeds on top.
- Slice and lightly toast the sandwich rolls. Spread mayo, then add salad leaves, cucumber, tomatoes, onions, the teriyaki chicken, pickled jalapeños, cheese slices, and a drizzle of BBQ sauce before serving.
