In a microwave-safe bowl, melt the butter and sugars together for about 20–30 seconds until the butter is fully melted. Whisk until smooth.
Step 2: Add Wet Ingredients
Whisk in the oil, egg, and vanilla extract until the mixture becomes light and slightly fluffy.
Step 3: Sift and Mix Dry Ingredients
Sift together the cocoa powder, all-purpose flour, cornstarch, and salt. Gently fold them into the wet mixture until just combined and be careful not to overmix.
Step 4: Add Chocolate Chips (Optional)
Fold in chocolate chips if using for extra gooeyness.
Step 5: Pour into Skillet
Lightly grease a 5″ mini skillet and pour the batter in, spreading it evenly.
Step 6: Bake
Bake in a preheated oven at 165°C (329°F) for 18–25 minutes, or until a toothpick inserted in the centre comes out with a few moist crumbs.

- 1/4 cup + 2 tbsp white caster sugar (75g)
- 2 & 1/2 tbsp (30g) soft brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 2 tbsp oil (25g)
- 5 tbsp cocoa powder (30g)
- 2 tbsp + 2 tsp all-purpose flour (26g)
- 1 1/4 tsp corn starch
- 1/4 tsp salt
