Ingredients

  • 3/4 cup sugar
  • 2 large eggs
  • 1/4 cup oil (55g)
  • 1/2 tbsp vanilla extract
  • 1 cup + 2 tbsp all-purpose flour (140g)
  • 1/2 tsp salt
  • 1 1/4 tsp baking powder
  • 55g butter
  • 1/2 cup hot milk (120ml)

Instructions

  1. Preheat your oven to 170°C and line a loaf tin with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, beat the sugar and eggs until the mixture turns light in colour and slightly fluffy.
  3. Pour in the oil and vanilla extract and mix until well combined and smooth.
  4. Sift together the flour, salt, and baking powder, then gently fold them into the batter just until no dry streaks remain.
  5. In a small saucepan, warm the butter and milk together over low heat until the butter has fully melted and the milk is hot but not boiling.
  6. Slowly add the hot milk mixture to the batter while whisking gently to create a smooth, glossy batter.
  7. Transfer the batter to the prepared loaf pan and lightly tap it on the counter to remove any trapped air.
