How to make Coffee Butter Toasts (roti boy inspired Toasts)?

Step 1: Prepare the Coffee Butter Mixture

First, place the softened butter and icing sugar in a bowl. Mix thoroughly until smooth and well combined.

Next, add the egg, instant coffee powder, and vanilla extract. Mix until the mixture becomes smooth and evenly combined.

Step 3: Add the Flour

Gradually add the all-purpose flour and a pinch of salt. Mix until you have a smooth, thick, buttery mixture suitable for piping.

Step 4: Dissolve the Coffee

For a smoother coffee flavour, dissolve the instant coffee in the warm water to form a paste before incorporating it into the butter mixture. This helps distribute the coffee evenly without leaving dry pockets.

Step 5: Add the Coffee Topping

Pipe a thick, generous layer of the coffee butter mixture over the top of the sandwich. Make sure the surface is well covered so it develops a crisp, golden crust during cooking.

For the coffee butter mixture:

  • 6 tbsp Softened butter (90g)
  • 6 tbsp Icing sugar (75g)
  • 1 Egg
  • 1 heaped tbsp Instant coffee powder
  • 3/4 tbsp Warm water
  • 1/4 tsp Vanilla extract
  • 3/4 cup All-purpose flour (105g)
  • A pinch of Salt

For assembly:

  • 6 Bread slices (brioche recommended, or any bread of choice)
  • Butter blocks / slices (for spreading)
  • Mozzarella slices (optional, for the cheesy version)

Instructions

  1. Add the softened butter and icing sugar to a bowl. Mix until smooth and well combined.
  2. Add the egg, instant coffee powder, and vanilla extract. Mix thoroughly until smooth.

  9. Alternatively, preheat the air fryer to 180°C / 355°F. Air fry the assembled toasts for 8–10 minutes, checking around 8 minutes to prevent overbrowning.
  10. Remove from the oven or air fryer and allow the toast to cool for a few minutes. This helps the coffee crust firm up and become crisp.
  11. Serve warm while the topping is crisp and the bread is soft and tender.

  1. For the softest and richest result, you can use my Brioche Bread recipe as the base for these Coffee Butter Toasts. However, making homemade brioche is completely optional. Regular sliced bread works perfectly well too.
