- 150g unsalted butter (2/3 cup)
- 200g chopped semi-sweet or dark chocolate (1 cup)
- 150g powdered sugar (3/4 cup)
- 100g soft brown sugar (1/2 cup packed)
- 90g All purpose flour (3/4 cup approx)
- 1/2 tsp instant coffee powder (optional)
- 30g cocoa powder (1/4 cup)
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3 large room temperature eggs
- 100g milk chocolate chunks (optional)
Instructions
- First, preheat your oven to 170°C (340°F) and line an 9 inch square pan with parchment paper.
- In a heatproof bowl, melt the butter and chocolate in the microwave with 15 seconds bursts until smooth. Then whisk in the powdered sugar and brown sugar thoroughly until combined. Add room temperature eggs and vanilla and mix again.
- Next, sift in the cocoa powder, flour, instant coffee powder and salt, and gently fold until just combined. At this point yiu can add milk chocolate chips if u like and gently fold.
- Pour the batter into the prepared pan, smooth the top, and bake for 22-25 minutes until the center is just set with wet crumbs.
- Let the brownies cool down and set at room temperature for about 45 minutes to an hour.
- Slice them with a knife and clean the knife with a warm wet towel in between cuts for cleaner slicing.
