  • 1/4 cup brown sugar (50g)
  • 2 tbsp white sugar (25g)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour (90g)
  • 1/4 tsp baking soda
  • 1/2 tsp Instant coffee powder
  • A pinch salt
  • 1/4 cup semi-sweet chocolate chips (plus extra for topping)
  • 2 tbsp nutella

Instructions

  1. Whisk melted butter, brown sugar, and white sugar until combined. Add egg yolk and vanilla extract and mix until smooth.
  2. Fold in flour, baking soda, instant coffee powder, and salt until a few flour streaks remain, then mix in the chocolate chips.
  3. Press half the dough into a 4 inch cookie pot or baking dish. Spread Nutella over the dough, then cover with the remaining dough. Top with extra chocolate chips.
  4. Bake at 175°C for 11–14 minutes or air fry at 170°C for 10–14 minutes until set with a soft center.
