Expert Tips for Best Results!

  • Use Tall Parchment Paper for Easy Baking  Since this cake rises significantly while baking, make sure to line the sides of your cake pan with tall strips of parchment paper that extend above the rim of the pan. This prevents the batter from overflowing and gives the cake enough space to rise evenly without sticking to the sides. It also makes removing the cake from the pan much easier once it has cooled.
  • Cool the Chocolate Mixture Before Adding Eggs  Allow the melted butter and chocolate mixture to cool slightly before combining it with the eggs. Adding a very hot mixture can affect the eggs and may change the final texture of the cake.
  • Check the Cake Before the Suggested Baking Time  Oven temperatures can vary, so start checking the cake around the 50-minute mark. The perfect cake should have a skewer that comes out with a few moist crumbs but no wet batter.
  • Let the Ganache Thicken Before Pouring – Allow the chocolate ganache to rest for 15–30 minutes before adding it to the cake. A slightly thicker ganache will spread beautifully and create a smooth, glossy finish.
  • Serve Warm for the Best Experience  For an extra indulgent dessert, warm a slice of chocolate mud cake slightly before serving and pair it with vanilla ice cream. The combination of warm chocolate cake and cold creamy ice cream makes this dessert even more special.

How to make Chocolate Mud Cake?

Step 1: Prepare the Cake Pan and Oven

Start by preheating your oven to 160°C (320°F) or 150°C fan-forced. Grease and line an 8-inch deep round cake pan with parchment paper, making sure the paper extends above the sides of the pan as the cake rises significantly during baking. This also makes it easier to remove the cake once it has cooled.

Step 2: Melt the Chocolate Mixture

Melt the butter and chopped dark chocolate together until smooth and glossy. Once melted, stir in the cocoa powder until fully combined. Allow the mixture to cool slightly before adding it to the batter.

Step 3: Combine the Wet Ingredients

In a large mixing bowl, whisk together the caster sugar, brown sugar, eggs, and vanilla extract until smooth. Add the oil, buttermilk, and cooled chocolate mixture, then mix until everything is well incorporated and the batter looks rich and silky.

Step 4: Add the Dry Ingredients

In a separate bowl, combine the plain flour, cocoa powder, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and gently fold until just combined. Avoid overmixing the batter to keep the cake light, moist, and tender.

Step 5: Bake the Chocolate Coffee Cake

Pour the batter into the prepared cake pan and smooth the top. Bake for 55–65 minutes, checking from around the 50-minute mark. The cake is ready when a skewer inserted into the centre comes out with a few moist crumbs but no wet batter. Allow it to cool in the pan for 15 minutes before transferring it to a wire rack.

Step 6: Prepare the Chocolate Ganache

While the cake cools, heat the heavy cream until it is hot and just beginning to simmer. Pour it over the chopped semi-sweet chocolate and let it sit for a few minutes. Stir gently until the chocolate melts completely and the ganache becomes smooth and glossy.

Step 7: Finish and Serve

Let the ganache thicken slightly for 15–30 minutes, then pour it over the cooled cake and spread evenly. Slice and serve this rich Chocolate Mud Cake on its own or with a scoop of vanilla ice cream for an extra indulgent dessert.

Ingredients

For Cake:

  • 2/3 cup unsalted butter (145g)
  • 150g chopped dark chocolate
  • 1 ½ tbsp instant coffee dissolved in 2/3 cup (153 ml) hot water
  • 2 cups plain flour (248g)
  • 1/2 cup cocoa powder (45g)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup caster sugar (250g)
  • 3/4 cup brown sugar (150g)
  • 3 eggs
  • 4 tbsp oil
  • ~ 1/2 cup buttermilk (103 ml)
  • 1 tsp vanilla extract

For Chocolate Topping:

  • 124g semisweet chocolate
  • 140g heavy cream

Instructions

  1. First, preheat your oven to 160°C (320°F) or 150°C fan-forced. Grease an 8-inch deep round cake pan and line both the base and sides with tall parchment paper, allowing the paper to extend above the rim to support the cake as it bakes. You may also use a 9-inch pan if preferred.
  2. Meanwhile, dissolve the instant coffee in the hot water and set it aside to cool slightly. In a microwave-safe bowl, combine the butter and chopped dark chocolate. Microwave in 20-second intervals, stirring well after each interval until completely melted and smooth. Then stir in the cocoa powder until fully incorporated and allow the mixture to cool for a few minutes.
  3. Next, in a large mixing bowl, whisk together the caster sugar, brown sugar, eggs, and vanilla extract until the mixture becomes smooth, slightly lighter in color, and well combined.
  4. Then, add the oil, buttermilk, the cooled coffee mixture, and the cooled melted chocolate mixture. Whisk everything together until smooth and evenly combined.
  5. In a separate bowl, whisk together the plain flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, gently folding with a spatula until no dry streaks remain. Be careful not to overmix, as this helps keep the cake soft and tender.
  6. Now, pour the batter into the prepared cake pan and smooth the top evenly. Bake for 55–65 minutes, checking from the 50-minute mark. The cake is ready when a skewer inserted into the center comes out with a few moist crumbs rather than wet batter.
  7. Once baked, allow the cake to cool in the pan for about 15 minutes before carefully transferring it to a wire rack. Let it cool completely before adding the ganache so the topping sets beautifully without melting.
  8. While the cake cools, prepare the chocolate ganache. Heat the heavy cream in a small saucepan until it just begins to simmer, but do not let it boil. Pour the hot cream over the chopped semi-sweet chocolate and let it sit undisturbed for 5 minutes.
  9. After resting, gently stir the ganache until it becomes smooth, glossy, and lump-free. Allow it to stand for 15–30 minutes, stirring occasionally, until it thickens to a pourable consistency.
  10. Finally, pour the ganache over the cooled cake, allowing it to drip naturally down the sides. Let the ganache set for a few minutes before slicing. Serve the cake slightly warm with a generous scoop of vanilla ice cream for the ultimate chocolate dessert.
